Artichoke Spinach Dip

Description

Artichoke dip is a popular appetizer in many restaurants. You can make a healthy artichoke dip at home that is just as delicious! Artichokes are high in fiber, rich in vitamins A, B, and K, and a good source of folic acid with minerals too.

Ingredients
  • 1 tbsp ghee
  • 1 medium white or yellow onion, diced
  • 4-5 garlic cloves, minced
  • 12 oz fresh spinach, chopped
  • 14 oz can artichokes, drained and chopped
  • 1 cup paleo mayo (paleo mayo is avocado or olive oil based)
  • 7-8 oz coconut cream (or used the solid part of the can of full-fat coconut milk)
  • 1/4 cup nutritional yeast
  • 2 tbsp arrowroot or tapioca flour
  • 1 tbsp lemon juice
  • 1/2 tsp sea salt
Instructions
  1. Preheat oven to 375°F.  Grease an 8"x 8"pan or similar size, with ghee or butter. In a large skillet, melt the butter or ghee on medium heat. 

  2. Add the onion and sauté until translucent. Add the garlic and stir for 1-2 minutes more. Add the spinach and stir for 4 to 5 minutes until the spinach cooks down. Turn off the heat and set aside.

  3. Combine the remaining ingredients in a large bowl. Add the spinach/onion mixture to the bowl and discard any liquid still in the pan. Mix all ingredients until combined, then spread in the baking pan. Bake for 25 minutes.

  4. Tip: Serve with healthier baked chips, gluten-free crackers, carrots and celery sticks.
