Artichoke dip is a popular appetizer in many restaurants. You can make a healthy artichoke dip at home that is just as delicious! Artichokes are high in fiber, rich in vitamins A, B, and K, and a good source of folic acid with minerals too.
Preheat oven to 375°F. Grease an 8"x 8"pan or similar size, with ghee or butter. In a large skillet, melt the butter or ghee on medium heat.
Add the onion and sauté until translucent. Add the garlic and stir for 1-2 minutes more. Add the spinach and stir for 4 to 5 minutes until the spinach cooks down. Turn off the heat and set aside.
Combine the remaining ingredients in a large bowl. Add the spinach/onion mixture to the bowl and discard any liquid still in the pan. Mix all ingredients until combined, then spread in the baking pan. Bake for 25 minutes.
Tip: Serve with healthier baked chips, gluten-free crackers, carrots and celery sticks.
