Beefy Mushroom Soup

Description

A satisfying soup for sure. Did you know that mushrooms are a super-food? They've been used as food, medicine and spiritual aids for centuries. Mushrooms have loads of vitamins, promote a healthy immune system, and boost your bone health.

Ingredients
  • 2 tbsp butter (or ghee)
  • 1 lb ground beef (grass-fed is best)
  • 1 cup mushrooms, sliced (or 8 oz.)
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 large celery stalk, diced
  • 1 large yellow or while onion, diced
  • 4 cup beef broth (or beef bone broth)
  • 2 cup water
  • 1 tsp dried oregano
  • 1 tsp dried marjoram
  • 1 tsp dried thyme
  • 1/2 sea salt
  • 1/4 tsp pepper
Instructions
  1. In a large pot, heat the butter or ghee to medium-high. Add the ground beef and cook for  two to three minutes breaking up the beef as it cooks.

  2. When the beef is about halfway cooked, add the onions and garlic and stir continuously for two more minutes.

  3. Next, add the carrots and celery and continue stirring for another two minutes.

    Add the mushrooms and seasonings. Stir for 2 to 3 minutes.

  4. Pour in the water and broth and incorporate. Bring to a boil and then turn it down to a simmer, add a lid and cook for 15 minutes. Turn off the heat and serve.
