Description

A slice of warm banana bread with a slab of butter is heavenly. Easy to make and fun to feast on. Enjoy this great weekend recipe while lounging around in your pajamas on your day off. Your friends and family will ask you for an encore!

Ingredients
  • 3 large bananas
  • 3 large eggs
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 cup coconut sugar
  • 2 tbsp pure maple syrup
  • 1.5 cup almond flour
  • 1 cup tapioca flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • optional: tbsp sliced almonds or dark chocolate chips for top
Instructions
  1. Preheat oven to 350°F. Grease a 9"x 5" loaf pan with coconut oil or line with parchment paper. Set aside.

  2. In a medium bowl, mash the bananas well with a fork. Add the eggs, coconut oil, vanilla, coconut sugar and maple syrup. Hand stir or beat with a hand mixer on medium until smooth. Add the dry ingredients and combine, being careful not to over mix.

  3. Pour batter into the prepared loaf pan. Sprinkle nuts or chocolate chips on top if desired. Bake for 40 to 45 minutes or until a toothpick inserted in the middle comes out clean. Let cool.
