Delicious and nutritious! Cauliflower is a cruciferous vegetable that is naturally high in fiber and B vitamins. It has many health benefits, such as aiding digestion and circulation.
Preheat oven to 400°F and line a baking sheet with parchment paper.
Cut the cauliflower in large slices and lay on the sheet slightly apart from each other.
Brush all sides with ghee and sprinkle the tops with garlic, lemon juice, salt and pepper.
Bake for 25 minutes and check for doneness. For more tender cauliflower you may need to bake for another 5 minutes. It's done when you can stick a fork in it.
To get fancy, layer Chic Chimichurri Sauce
Chimichurri Sauce
Ingredients:
1 shallot
½ tbsp jalapeño, seeds removed
3 garlic cloves
¼ cup white or apple cider vinegar
¼ cup extra virgin olive oil
¼ cup parsley
¼ cup spinach
2 tbsp fresh oregano or 1 tsp dried
1 tbsp honey
1 tsp salt or more to taste
Add all the ingredients to a food processor or use an immersion blender to get the consistency you like.
You can also finely dice or mince all the ingredients by hand and then mix in a medium bowl for a chunkier version.
(A delicious topping for grilled steak, pork chops, roasted chicken, fish, kabobs, or roasted veggies. Add it to mayo or yogurt as zesty dipping sauce.)
