Sweet potatoes are full of antioxidants, vitamins and fiber to support your eye, digestive and heart health.
Preheat the oven to 425°F. Line a baking sheet with parchment paper.
In a large bowl, coat the sweet potato pieces with avocado oil. Add the remaining ingredients and toss until all the pieces are well coated.
Spread them onto the parchment evenly; they will cook better if they are not touching. Bake for about 12 minutes. When they start to brown, toss them on the baking sheet. Roast for another 10 to15 minutes until they are slightly browned all over. Let cool before serving.
