Description

Sometimes it's not easy finding healthy mayo.  When buying, avocado or olive-oil-based is best but sometimes other unhealthy ingredients are included.

Now you can whip up your own version of this popular condiment. You'll feel good knowing exactly what healthy ingredients are in it.

Ingredients
  • 1 egg
  • 1 cup avocado oil (or light olive oil)
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp salt (or more to taste)
Instructions
  1. Add the egg, lemon juice, mustard, and salt to a small skinny container, preferably the included with your immersion blender. Then slowly pour in the avocado oil. Let this mixture sit for about 30 seconds.

  2. With the immersion blender, place blades at the bottom and blend at low or medium speed. Keep it at the bottom until you see the mixture whipping and turning white. Then slowly bring it up to the top. Continue blending in a slow up-and-down motion until completely integrated.

  3. Alternatively, in food processor, add all the ingredients except the oil. On medium-high speed, slowly add the oil until everything is blended and becomes a creamy consistency.

    Store in the refrigerator up to 5 days.
