Description

Don't be afraid of Kale! So many delicious dishes can be amazing with this nutrient-rich green!

Ingredients
  • 4-5 cup curly kale
  • 1 sweet apple, diced
  • 1/4 cup dried cranberries or raisins
  • 1 tbsp sliced almonds
  • 1/2 tsp fine sea salt
Instructions
  1. Tear out the thick ribs out of the bottom of the kale leaves. Massage the leaves for about 2 to 4 minutes with extra virgin olive oil and about ¼ tsp of salt. This makes the leaves more tender.

  2. Combine the ingredients into a bowl and toss with 3 tbsp of apple cider vinaigrette dressing

Apple Cider Vinaigrette

  • 1/3  cup extra virgin olive oil
  • 3 tbsp apple cider vinegar
  • 1 clove garlic, finely minced
  • 2 tsp Dijon mustard
  • 1/2 tbsp maple syrup
  • salt and pepper to taste
