Description

These muffins smell divine! Pumpkins are part of the gourd family. They have vitamins A, E, C, K, and B6 with an immunity booster that improves eye health and vitalizes beautiful skin.

Makes approx 12 muffins
  • 2 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 tbsp pumpkin spice
  • 1/2 tbsp cinnamon
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup pumpkin puree
  • 6 eggs
  • 1/2 cup almond milk
  • 2 tsp vanilla extract
  • 1 tbsp butter, ghee or coconut oil (for greasing or 12 paper muffin liners)
Instructions
  1. Preheat the oven to 350°F. 

    Line the muffin pan with paper liners or grease each muffin hole with butter, ghee, or coconut oil.

  2. In a medium bowl, crack the eggs and scramble well. Add the pumpkin puree with a whisk. Then add the almond milk and the vanilla until integrated.

  3. Combine the dry ingredients in a large bowl. Then add the wet ingredients and incorporate well.

    Add the batter to the muffin cups and fill to the top. Don't worry about overfilling; these do not rise much. Bake for 35 to 40 minutes. Store in an airtight container in the refrigerator.
