Description

This pineapple smoothie will remind you of the tropics. It's a fabulous treat while you're sitting back enjoying a break. What's better than a quick vacation only traveling no further than your kitchen?

Ingredients
  • 1 cup pineapple chunks
  • 1 medium banana (broken up into chunks)
  • 2 1/2 cup spinach or kale
  • 1 cup full fat coconut milk
  • 1 cup chilled water
  • 1/2 tbsp lime juice (or juice from 1/2 a lime)
  • 1 tsp vanilla extact
  • 1/2 to 1 cup ice
Instructions
  1. If you don't have frozen pineapple chunks, add 1/2-1 cup ice at the bottom of your high-speed blender. Then add all of the other ingredients (add your chilled water last). 

  2. Add the water until it just covers the other ingredients and blend until smooth. Pour into 2 glasses and enjoy!
