Preheat the oven to 400°F.
In a large bowl, toss the squash, paprika, nutmeg, and 1 tablespoon of the avocado oil together. Spread it out evenly on a baking sheet lined with parchment paper. Roast for 12 to 15 minutes. While the squash roasts, prepare the sausages, apple, and kale.
Remove the pan from the oven and combine the sausages, apple, and kale with the squash. Return to the oven for another 20 minutes.
In a small bowl, mix the other tablespoon of avocado oil, maple syrup, mustard, and apple cider vinegar and set aside.
Remove from the oven and pour the maple syrup-vinegar mixture over the dish. Mix to combine and serve!
