A recipe to totally fall in love with. Your taste buds will do back flips with these warm and tasty flavors. Sweet potatoes are a great source of vitamins A & C, and potassium. They also help regulate blood sugar, support digestion, and contain anti-inflammatory properties.
Heat 1 tablespoon of coconut oil in a large pot on medium-high and cook the sausage until browned. Set aside.
In the same large pot, add another tablespoon of coconut oil. Saute the diced onions on medium-low heat until translucent.
Add the sweet potato, pumpkin puree, and spices and stir until combined. Add the chicken broth, stir to combine, cover, and simmer on low for 20 minutes.
Use an immersion blender within the pot or pour all the ingredients into a large blender and puree until smooth. If using a blender, return the soup to the pot. Add the sausage and coconut milk. Stir, heat through and serve it up!
