Description

One of my favorites! This scrumptious salad can be thrown together in no time!

Ingredients
  • 2 cup cooked, shredded chicken
  • 1 beet, raw and grated
  • 1 avocado, sliced
  • 1 sweet apple, diced
  • 1 cup dried cranberries
  • 1/2 cup pecans
  • 1/2 head romaine lettuce, chopped
  • 2 cup arugula
Instructions
  1. In a large serving bowl, add a mixture of romaine lettuce and arugula.

    Then add everything else. 

  2. Many dressings go wonderfully with this salad, but I recommend the Balsamic Vinaigrette

    Whisk in a small bowl and add your desired amount.

    Balsamic Vinaigrette

    • ½ cup extra virgin olive oil
    • 3 tbsp balsamic vinegar
    • 1 tbsp honey
    • 1 clove garlic, finely minced
    • pinch of salt and ground pepper

    Buying a whole roasted chicken makes it simple, plus you'll have left overs for another day.
