Steamed Artichoke

Description

Whole artichokes are a treat! Did you know these prickly, amazing veggies are prebiotics and function as a food source for your gut's microorganisms? The microorganisms metabolize and ferment preboitics to survive. This process is beneficial to your digestive system.

Ingredients
  • 2 Artichoke
  • 5 tbsp ghee or butter
  • 2 tbsp paleo mayonnaise (avocado or olive oil based)
  • 2 pinches salt
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 1/4 tsp thyme
  • 1/2 lemon (optional)
Instructions
  1. Rinse the artichokes on the outside and in the middle. Drain the water and cut off the stems with a knife.

    Place them in the bottom of a large pressure cooker and add 1 cup of water. You'll want them to sit straight up in the water. Add a teaspoon of ghee or butter to the top of each and sprinkle a pinch of all the dry seasonings on top. If you like, squeeze about ½ teaspoon of lemon juice on each artichoke.

    Set the pressure cooker for 22 minutes.

    If you're using a pot for the stove, cover and simmer for 45-55 minutes. Check the artichokes after halfway through. They are done when you can easily put out the leaves. You may need to add more water so the bottoms don't burn.

Note

For dipping

Melt the ghee or butter and pour into small dipping containers. You can also add about 1 tablespoon of paleo mayo to each and season with dried or fresh seasonings and salt.
