Vanilla Chocolate Chip Coconut Milk Ice Cream

Ingredients
  • 14 oz can full fat coconut milk
  • 14 oz can coconut cream
  • 2 tsp vanilla extract
  • 1/2 cup pure maple syrup
  • 1/8 tsp salt (use a good salt like sea salt or Himalayan salt)
  • optional: One half cup dark chocolate chips
Instructions
  1. If you're using an ice cream maker, you may need to place the ice cream container in the freezer about an hour beforehand—follow the directions.

  2. Add all the ingredients to a blender and blend until combined, except for the chocolate chips.

  3. Pour into an ice cream maker. Mine churns for about 25 minutes to reach the consistency I like. Try not to devour all at once! Freeze leftovers and cover.

Note

Note: If you don't have an ice cream maker, pour the mixture into a freezer-safe container and freeze for 4 to 5 hours. Stir every 30 minutes for the first hour.
