Description

When you taste this soup you'll forget how healthy it is because the smell of the spices alone will warm your insides! Butternut squash has so many benefits: Vitamins A, C, & E, magnesium and potassium. These nutrients contribute to your vision, immune system, bones, and organs.

Ingredients
  • 1 tbsp butter (or ghee)
  • 1 lb turkey or chicken sausage (pork sausage works too!)
  • 1 large yellow or white onion, diced
  • 3 medium carrots, diced
  • 2 cup butternut squash, peeled and diced (deseeded)
  • 4 cup chicken or vegetable broth
  • 1/4 tsp ground allspice
  • 1 tsp salt
  • 1/2 tsp dried thyme
  • 14.5 can diced tomatoes
  • 2 cup lightly packed kale (ribs removed and coarsely chopped)
  • 1 pinch cayenne or pepper to taste
Instructions
  1. In a large pot on medium-high add either the butter or ghee. Add the ground protein and break up the meat as you stir until it is almost cooked through.

  2. Add the carrots and butternut squash and stir continuously for 3 more minutes. Add the garlic and stir continuously for one more minute.

  3. Then add the broth along with the remaining ingredients. Stir to incorporate and bring to a boil.

  4. Reduce the heat to a simmer for 20 minutes with a cover.

    Serve it up!
