Knock-your-socks-off Kale Salad

Don't be afraid of Kale! So many delicious dishes can be amazing with this nutrient-rich green!

Tear out the thick ribs out of the bottom of the kale leaves. Massage the leaves for about 2 to 4 minutes with extra virgin olive oil and about ¼ tsp of salt. This makes the leaves more tender.

Combine the ingredients into a bowl and toss with 3 tbsp of apple cider vinaigrette dressing

Apple Cider Vinaigrette
- 1/3 cup extra virgin olive oil
- 3 tbsp apple cider vinegar
- 1 clove garlic, finely minced
- 2 tsp Dijon mustard
- 1/2 tbsp maple syrup
- salt and pepper to taste
