Description

You'll be more than happy while chowing down this fun dish with an Asian flare. Broccoli is a super-food boasting a wealth of nutrients like antioxidants,  vitamin C, calcium, and selenium.

Ingredients

For Chicken Rub

Asian Awesome Sauce

Instructions

  1. Preheat the oven to 400°F. Combine the rub ingredients and rub onto the chicken breasts.

  2. Place on a roasting pan lined with parchment paper and place in the oven for 20 minutes.

  3. Next, in a medium pot add about 2 inches of water and add the carrots and broccoli. Simmer for about 10 minutes so you can pierce with a fork. Take these out when cooked and set aside.

  4. In a small bowl, combine the Asian Awesome Sauce and set aside.

  5. When the chicken is cooked through, slice into bite-sized pieces and combine with the veggies. Add the desired amount of sauce on top and serve.

Note

Tip: Cauliflower rice, white rice, or rice noodles are fine additions to the bottom of this dish.
