Sensational Sweet Potato Brownies

Description

Surprised we get to enjoy brownies? Sweet potatoes are a nutritional powerhouse with fiber and vitamins A and C. Cocoa powder is high in antioxidants and rich in magnesium. Devour with pleasure!

  1. Make the sweet potato puree. Peel the sweet potatoes, cut into one inch cubes, and steam for 10 to12 minutes—simmer in an inch of water in a pot with a lid to cover. Drain the water and use a fork or a potato masher to mash the potatoes.

  2. Preheat the oven to 350°F and prepare an 8" x 8" inch square baking dish lined with parchment paper or greased with coconut oil.

  3. Combine the mashed sweet potatoes with the eggs.  If you use an electric mixer the brownies will be creamier. Add the remaining wet ingredients and mix. Add the dry ingredients and mix thoroughly into the wet ingredients.

  4. Add the batter to the baking dish and smooth with a spatula. Bake for 50 to 60 minutes. When a toothpick comes out clean, they're done. Cool for 30 minutes.

  5. On the stove, bring about 1 cup of water to a low simmer. Add the chocolate chips to a glass or stainless steel bowl and place the bowl over the pot. Stir the chocolate chips continuously until they are melted and smooth. Spread the melted chocolate evenly on top of the brownies. Let cool, cut, and eat with pleasure!
